Café Fudge Truffle

You're probably thinking it's Valentine's Day in a few days, and want to make something fun but something easy. Well, here you go, an easy fudge truffle recipe that only uses a few ingredients. It's so easy even your husband can make them for you (let's be honest, he probably wants them 😂). It has a rich coffee flavour and a note of white chocolate. Paired with a raspberry tea. Whether it's for your mom, grandma, sister, or cousin they'll love it! (assuming they like coffee) All you need is a medium-size saucepan, spatula, a small square baking dish, and some parchment paper. 

Ingredients:
- 1 can of condensed milk
- 4 cups of white chocolate chips 
- splash of vanilla extract
- 1 shot of espresso
- 1/2 teaspoon of salt ( I used pink salt)
- 1/4 cup of whipping cream
- 2 tablespoon of butter

(clearly, I forgot some in the picture lol)

Directions:
1. Brew your coffee, and set it aside. Oil and line your square baking dish, and set aside. In the saucepan on low, add your condensed milk and chocolate, mix until combined. Then, add the rest of your ingredients to the pan, mix until it becomes thick.

2.  Your mixture should be thick when pouring it, showing folds (not like this 👇 lol) in the prepared baking dish, and put it in the freezer for a few hours until it's firm. 

3. After it's set, cut the fudge into 1-inch cubes (it'll be sticky), roll into a ball making 40 truffles (don't worry I ate a couple too when rolling them, so maybe less than 40 😂). Then, lightly coat the truffle in powder sugar and instant espresso powder. Drizzle with melted chocolate or keep it simple, however, you like it. 

Tip: Instead of melting chocolate in the microwave (ugh takes so much time and effort 🙄), put some chocolate in a small Ziploc bag and put it in a bowl with hot water. Dry the bag, and cut the corner making it easy for you to drizzle. Then put the truffles in the fridge for the chocolate to set.

These fudge truffles should be kept in the fridge.
