Mocha Soufflé Pancakes
Making delicious soufflé pancakes just for two. Using only a few ingredients. It's fluffy and decadent, with a rich coffee flavour.
Here is what you need:
- non-stick medium size pan with a lid
- spatula
- hand mixer
- whisk
- ice cream scoop
- two bowls (1 small and 1 medium)
- a tablespoon
- a teaspoon
Ingredients:
- 2 eggs separated
- 2 tablespoons of all-purpose flour
- 4 teaspoons of cornstarch
- splash of vanilla (optional)
- 2 tablespoon of powder sugar
- 1 teaspoon of cocoa powder
- 1 shot of espresso
- pinch of salt (I used pink salt)
1. Brew your espresso shot and, set it aside to cool. In a small bowl, whisk together egg yolks, flour, cornstarch, cocoa powder, vanilla and your cooled espresso shot, mix until well combined.
2. Using your hand mixer, gradually add the sugar to your egg whites, until they form stiff peaks. When done, put the bowl over your head and fingers crossed it doesn't fall.
3. Add half the egg yolk mixture to the egg whites and fold, add the remaining egg yolk mixture and make about ten folds or until it’s well incorporated. Your batter may be a little runny.

4. In a medium sized, non-stick pan, lightly spray flavourless oil. Set to medium heat. When the pan is well heated, put two ice cream scoop fulls per pancake. It should make four pancakes. Don't flatten them.
Add two teaspoons of water to the pan and cover. Let it steam for 2 minutes or until it looks a little dry. Add one more ice cream scoop full to each pancake and add water again. Let it steam for a minute and flip them gently. Cover to cook for about 2 minutes or until it’s firm and a little jiggly.
5. Transfer to a plate and add whatever you like. I added powder sugar, bananas and some hazelnut spread. Enjoy!
