Café Waffles

These waffles are perfect for a long weekend, like Mother's day. They only take a few minutes to whip up. These waffles have everything you need for a balanced breakfast, like oat flour for good fibre, almond flour for good healthy fats, and Greek yogurt for protein. With a drizzle of coffee syrup, it gives a lovely flavour to your waffles. Here are what you need.
Ingredients:
3/4 cup of oat flour
1/4 cup all-purpose flour
1/4 cup of almond flour
1 teaspoon of espresso powder
1 shot of espresso
1/2 cup of milk (I used almond milk)
1/4 teaspoon of baking powder
1/4 teaspoon baking soda
1/2 cup of sugar or coconut sugar
Splash of vanilla (optional)
Pinch of salt
Coffee Syrup:
1 teaspoon of espresso powder
1 teaspoon of hot water
1-2 teaspoon of maple syrup
Make the coffee syrup by combining the hot water with the espresso powder, then add the maple syrup.
Directions:
1. In a bowl, mix the flours, baking soda, baking powder, sugar, salt and, espresso powder, until well incorporated. To the dry ingredients, add the rest of the ingredients, until it becomes a thick cake batter.
2. After it's all mixed, heat the waffle iron. When it's well heated, add a half cup batter to your iron, let them cook for about 8 to 10 minutes. I cooked mine for longer because, I like them a bit crisper, but it's up to you.
They're all ready to eat. I topped mine with Greek yogurt, berries and coffee syrup.
