These caramel macchiato cookies are perfect for the sweet craving everyone gets. They're great for gatherings or even just to share at work. They're very simple to make, all you need is either an electronic hand mixer or a stand mixer (you could use a wooden spoon and bowl but you'll probably be very sore the next day) let's get into the ingredients.
Ingredients
- 1 cup of unsalted butter at room temperature (I used plant-based butter)
- 1 large egg
- pinch of salt
- 1/2 cup of brown sugar
- 3/4 cup of granulated sugar
- 1/2 cup of caramel syrup (I used Torani)
- 3 tablespoons of instant espresso powder
- 1/2 teaspoon of baking soda
- 3/4 teaspoon of baking powder
- 2 1/4 cup of flour
- 1 1/2 cup of oats
- 1 cup of chocolate chips (whichever you have on hand. I used semi-sweet)
Directions
1. preheat oven to 350°f. In a large bowl, cream together the butter, granulated sugar, and brown sugar until combined. Then, add your egg syrup and salt, Whip until smooth.
Whisk together all your dry ingredients except for the chocolate chips. Add your dry ingredients to your wet ingredients half at a time. After it's fully combined add your chocolate chips, your dough should be a little sticky but not too sticky. (it will be a sticky kind of dough though)
2. To your lined baking sheet, use a small cookie scoop or a tablespoon to scoop the dough on your baking sheet. Making 12 cookie balls on each sheet. After you're done, bake your cookies, for 12 to 15 minutes or until slightly golden brown. Making at least 3 to 4 dozen cookies depending on the size of your scoop.
3. After they're done baking, let it cool for 4 minutes before transferring to a wire rack, to cool completely. (or be like me and eat them straight off the pan lol)
These cookies will last about 4 to 5 days (maybe less, they're addicting lol).
