Pumpkin Spice Waffles With A Coffee Syrup
Makes 6 waffles
This week I made pumpkin spice waffles with coffee syrup. They were a hit. My niece really liked them (I only gave her the waffle of course)  The coffee syrup can go with anything. Pancakes, cheesecake truffles(which I'll be showing you next week) etc. These waffles aren't your regular waffles, I've made these a bit more filling. I find regular waffles not filling at all, maybe because I have a big appetite lol. I used oat flour, almond flour, and a few other ingredients. Now let's get started.
Waffle Ingredients 
- 1 1/2 cup oat flour
- 3/4 cup of all-purpose flour 
- 3/4 cup almond flour
- 1 1/2 teaspoon pumpkin spice
- 1 teaspoon of baking powder
- 1/2 cup pumpkin puree 
- 1 large egg
- pinch of salt
- 1/2 cup coconut sugar
- 2 cups of buttermilk ( I used oat milk with a splash of Apple cider vinegar)
- 1 teaspoon vanilla extract
Directions
1. In a large bowl, mix the dry ingredients and wet ingredients until it's fully combined. The consistency should be thick, like cake batter. 
2. Heat your waffle iron and pour half a cup of batter into it, let it cook for about 7 to 10 minutes. I like mine a bit more crispy so I cook them longer. After they are cooked, top them with whatever you like. I did whip cream since I ran out of Greek yogurt and my coffee syrup. Now let's make the syrup. 

Coffee syrup ingredients
Makes 1 cup syrup
- 1/2 cup granulated sugar
- 1/2 cup brown sugar 
- 1 shot of espresso
- pinch of salt
- 1/2 cup water

Directions
1. In a small saucepan on medium heat, add all the ingredients and let it cook for about 7 to 10 minutes or until the sugars are dissolved. 

There you have it some pumpkin spice waffles and a coffee syrup to go with it.
